Ingredients:
- 300g dark chocolate over 70% cocoa
- 7-8 eggs
- 2 tablespoons Ælred Green Coiron
- 1 tablespoon unsweetened coffee
- Salt
Melt the chocolate in a double boiler. Add 2 spoonfuls of Ælred Green Coiron to the chocolate pan. Separate the egg yolks from the egg whites. Mix the egg yolks with the chocolate. Add a pinch of salt and two spoonfuls of fresh water to the egg whites and beat until stiff. Gently fold the chocolate into the stiffly beaten eggs. Fill ramekins or a salad bowl and chill until ready to eat.
