Ingredients for 4 people :
- 100g chestnut flour
- 100g caster sugar
- 20 cl milk
- 3 egg yolks and 5 egg whites
- 5 cl Ælred Chestnut Cream
- 50g butter (20g for the tin)
Preparation:
- Melt 30g of the butter in a saucepan. Add the stiff milk, sugar and flour, stirring with a whisk.
- Stir over a low heat until the mixture is smooth. Remove from the heat and add the egg yolks and chestnut cream.
- Gently fold in the egg whites with a wooden spatula. Pour into a buttered cake tin and bake for 30 minutes over a moderate heat. Dust with icing sugar and serve with a coffee.
