Ælred Chestnut Cream Soufflé

Ingredients for 4 people : 

  • 100g chestnut flour
  • 100g caster sugar
  • 20 cl milk
  • 3 egg yolks and 5 egg whites
  • 5 cl Ælred Chestnut Cream
  • 50g butter (20g for the tin)

Preparation: 

  1. Melt 30g of the butter in a saucepan. Add the stiff milk, sugar and flour, stirring with a whisk.
  2. Stir over a low heat until the mixture is smooth. Remove from the heat and add the egg yolks and chestnut cream.
  3. Gently fold in the egg whites with a wooden spatula. Pour into a buttered cake tin and bake for 30 minutes over a moderate heat. Dust with icing sugar and serve with a coffee.
